WHere is an easy interpretation of a beverage found on a new drinks list. It's a large-volume premix that is packed with the flavours associated with Christmas time, rendering it ideal for your celebration. Any leftover cordial to use in morning drinks, sweets, or to mix another batch of this cocktail.
Bikini Recipe
Yields 10 guests
To make the Clementine Cordial (makes 750ml)
300ml newly squeezed clementine juice
200ml fresh lemon juice
500g fine sugar
To make the Drink (produces 850ml, to serve 10)
400ml premium vodka
100ml London dry gin
150ml peach-flavored liqueur
200ml clementine syrup (see above)
A few cranberries, as a garnish
Mandarin essential oil, as a final touch
Instructions
To prepare the Syrup: Combine the listed components into a pot, bring to a light boil, mixing until the sugar dissolves. Then, take off the burner and let it to cool completely. Pour to a sealable bottle, close it and refrigerate it chilled, it will last for around a month.
To make Batch Mix: Mix all the liquids into a big jug, let it rest for one hour, then pass it through , ideally through muslin, so it's fully clarified.
For serving: Pour 85ml from the cocktail base into a cocktail shaker containing ice, and stir carefully for one minute to chill. Filter into a frosted cocktail glass or equivalent, top with the cranberries and finish using a light spray with the mandarin essence above the glass.
